Ingredients

  • For the Caramel Layer:

1/2 cup coconut cream

    1 cup coconut sugar

      1 teaspoon vanilla extract

      • For the Flan Layer:

      1 package (14 ounces) silken tofu

        1 cup almond milk (or any other plant-based milk of your choice)

          1/2 cup granulated sugar

            1 teaspoon vanilla extract

              1 tablespoon lemon juice

              • For the Chocolate Cake Layer:

              1 and 1/2 cups all-purpose flour

                1/2 cup cocoa powder (unsweetened)

                  1 teaspoon baking soda

                    1/2 teaspoon salt

                      1 cup granulated sugar

                        1 cup almond milk (or any other plant-based milk of your choice)

                          1/3 cup coconut oil (melted)

                            1 tablespoon apple cider vinegar

                              1 teaspoon vanilla extract

                                1 tablespoon strong coffee (optional, enhances the chocolate flavor)

                                • Optional Garnish:

                                Vegan whipped cream

                                  Fresh berries or fruits

                                    Instructions 

                                    Preheat the Oven:

                                    • Begin by preheating your oven to 350°F (175°C). Grease the sides of a 9-inch round cake pan with vegan butter or oil. Optionally, you can line the bottom of the pan with parchment paper for easy removal later.

                                    Prepare the Caramel:

                                    • In a small saucepan, combine the coconut cream, coconut sugar, and vanilla extract.
                                      Cook the mixture over medium heat, stirring continuously until the sugar dissolves and the mixture begins to simmer.
                                      Allow it to simmer for about 5-7 minutes or until the caramel thickens slightly. Remove from heat and set it aside to cool.

                                    Create the Flan Layer:

                                    • In a blender or food processor, combine the silken tofu, almond milk, granulated sugar, vanilla extract, and lemon juice.
                                      Blend until the mixture is smooth and creamy, resembling a traditional flan texture. Set aside.

                                    Prepare the Chocolate Cake Batter:

                                    • In a large mixing bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt.
                                      Add the granulated sugar, almond milk, melted coconut oil, apple cider vinegar, vanilla extract, and strong coffee (if using).
                                      Mix the ingredients until a smooth and thick chocolate cake batter forms. Be careful not to overmix.

                                    Assemble the Chocoflan:

                                    • Pour the cooled caramel into the greased cake pan, spreading it evenly to cover the bottom.
                                      Gently pour the flan mixture over the caramel layer. It will float on top of the caramel.

                                    Add the Chocolate Cake Layer:

                                    • Carefully pour the chocolate cake batter over the flan layer, spreading it evenly to cover the flan completely.

                                    Bake the Chocoflan:

                                    • Place the cake pan in the preheated oven and bake for approximately 50-60 minutes or until a toothpick inserted into the chocolate cake layer comes out clean.

                                    Cool and Unmold:

                                    • Once the Vegan Chocoflan is baked, remove it from the oven and let it cool in the pan for about 15-20 minutes.
                                      Run a sharp knife around the edges of the pan to loosen the dessert.
                                      Invert the pan onto a serving platter, allowing the Chocoflan to gently release onto the plate. Remove the pan carefully.
