Ingredients

  • For the crust:

1 cup gluten-free flour blend

    1/2 cup almond flour

      1 teaspoon baking powder

        2 tablespoons maple syrup

          2 tablespoons melted coconut oil

            A pinch of salt

            • For the vegan "cheese" sauce:

            1 cup soaked cashews (soaked in water for at least 4 hours or overnight)

              1/2 cup coconut milk

                1 tablespoon lemon juice

                  1 tablespoon agave syrup

                  • For the fruit topping:

                  A selection of colorful fruits such as strawberries, blueberries, raspberries, kiwi, pineapple, mango, dragon fruit, peaches, etc.

                  • Optional garnish:

                  Toasted coconut flakes

                    Drizzle of dark chocolate

                      Instructions 

                      • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
                      • In a mixing bowl, combine the gluten-free flour blend, almond flour, baking powder, and a pinch of salt. Stir until well combined.
                      • Add the maple syrup and melted coconut oil to the dry ingredients. Mix everything together until a smooth dough forms. If the dough feels too dry, you can add a splash of water to help bind it together.
                      • Transfer the dough to the prepared baking sheet. Using your hands or a rolling pin, gently flatten and shape the dough into a circular pizza crust. Aim for a thickness of about 1/4 inch.
                      • Place the crust in the preheated oven and bake for 15-18 minutes, or until the edges are golden brown and the crust is cooked through. Remove from the oven and let it cool completely.
                      • While the crust is cooling, prepare the vegan "cheese" sauce. Drain the soaked cashews and add them to a blender or food processor. Add the coconut milk, lemon juice, and agave syrup. Blend until smooth and creamy, adjusting the consistency with more coconut milk if needed
                      • Once the crust has cooled, spread the vegan "cheese" sauce evenly over the surface, leaving a small border around the edges.
