Ingredients

1 cup of jasmine rice 2 cups of water

    1 tablespoon of coconut oil

      1 small onion, chopped

        2 cloves of garlic, minced

          1 red bell pepper, chopped

            1 green bell pepper, chopped

              1 cup of fresh pineapple, chopped

                1 tablespoon of soy sauce

                  1 teaspoon of curry powder

                    1 teaspoon of ground cumin

                      1/4 cup of chopped fresh cilantro

                        1/4 cup of chopped fresh basil

                          Instructions 

                          • First, rinse the jasmine rice thoroughly in cold water. Then, in a medium-sized pot, bring 2 cups of water to a boil and add the rinsed rice. Reduce the heat to low and let the rice simmer for about 18-20 minutes, or until all the water has been absorbed and the rice is fully cooked.
                          • While the rice is cooking, heat the coconut oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant.
                          • Next, add the chopped red and green bell peppers to the skillet and cook for another 2-3 minutes, or until the peppers are slightly softened. Then, add the chopped pineapple to the skillet and cook for another 1-2 minutes, or until the pineapple is heated through.
                          • Once the rice is fully cooked, add it to the skillet with the cooked vegetables and pineapple. Mix well, then add the soy sauce, curry powder, and ground cumin. Stir until all the ingredients are well combined.
                          • Finally, add the chopped fresh cilantro and basil to the skillet and stir again. Let the mixture cook for another 1-2 minutes, or until the herbs are slightly wilted.
